Ingredients
- 8 ounces boneless beef round steak, 3/4-inch thick
- 1 tablespoon flour
- 1/4 teaspoon salt
- 1/16 teaspoon ground black pepper
- 1 tablespoon vegetable oil
- 1/4 cup chopped onion
- 1 8-ounce can seasoned stewed tomatoes
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon Italian seasoning, crumbled
- 1/3 cup sliced carrot
- 1/3 cup sliced celery
- 1 small zucchini, cut into strips
- 1 cup hot cooked rice
Instructions
- Cut beef in two pieces. Combine flour, salt and pepper; pound into steak. Cook meat in oil in medium skillet until brown. Drain fat.
- Stir onion, tomatoes, broth, Worcestershire sauce and Italian seasoning into skillet. Cover and simmer 35 to 40 minutes.
- Add carrot and celery; cover and cook 5 minutes. Stir in zucchini; cover and cook 5 minutes, or until meat and vegetable are tender. Serve over fluffy rice.
